Holiday Mac and Cheese





Sorry that I've been away for so long without a new post.  The holidays have been a very busy time for me with a lot of cooking.  I did manage to take pictures of a few of the things I cooked though.  This is my Mac and Cheese.  My boyfriends family looks forward to me bringing it to every gathering they host and as a bonus it's super easy to make.

Ingredients:

  • 1lbs Gruyere cheese shredded
  • 1lbs Good quality American Cheese shredded
  • 1 qauart Heavy Cream
  • 1 box macaroni noodles
  • 1 container pico de gallo (or make your own, about a cup)
  • 1 bunch of cilantro chopped
  • salt, pepper, and powdered mustard to taste (I used about a teaspoon of each)
Cook the Macaroni noodles in one pot according to directions on the box. 

Meanwhile heat up the heavy cream, salt, pepper, and mustard in another pot over medium to medium high.  

Once the cream is simmering, but not boiling start to add the cheese.  I start with the American cheese because it melts very well.  In addition to melting very well there is something about it that helps melt other cheese added after the fact.  Add the cheese a handful at a time letting it melt and the cream come back up to temperature before adding the next handful until all the cheese is melted into the cream.  Allow to simmer on low for a few minutes to thicken up.

Once this is all done mix your drained noodles, cheese sauce, cilantro, and pico de gallo together in a bowl.  When I'm doing this at home I leave the noodles out because I think it reheats better as leftovers that way, but it travels better and looks nicer all mixed together.
