Brussel Sprouts You Want to Eat




I know brussel sprouts are not super exciting.  They along with turnips seem to be one of the most unfairly maligned vegetables out there.  If you boil them to death they are of course awful.  That's not what this recipe is about.  This is about tasty brussel sprouts that someone will want to eat. 

Ingredients:

  • 1lbs brussel sprouts, halved and trimmed
  • 4 slices of bacon
  • 1t salt + extra for water.
  • 1 stick of unsalted butter (or leave out the salt if using salted butter)
The first step is to trim up the brussel sprouts.  Cut the nub on the bottom off, then cut the brussel sprout in half through where that nub was.  Once you have 2 halves peal off the outer tough leaves and place the brussel sprout into salted water.  This will remove the bitterness that many people find unpleasant about brussel sprouts.  Once you have all of your sprouts in the water you can move to cooking them, or keep them in a closed container in the water for a day or 2 in the fridge.  Drain before cooking.

When you are ready to cook them, cook your bacon on medium to medium high in a large frying pan with a lid.  You don't need the lid for the bacon, but you will for the sprouts.  

After cooking the bacon remove it from the pan leaving all the rendered fat in the pan.  At this point you can eat the bacon or use it in another recipe.  Add the stick of butter to the hot pan and allow it to melt.

Once the butter is melted add the brussel sprouts.  Stir and allow to coat with the butter and fat in the pan.  Sprinkle with salt.  Place the lid on the pan and cook over medium stirring occasionally until they start to brown.  Depending on how hot your stove cooks and how big your sprouts are this should take between 20 and 30 minutes.  I personally think the small ones make a more tender meal, but they are also a lot more work.
