Lamb Chops with Mustard Cream Sauce



I found myself in possession of some thick cut lamb chops that Costco had on sale and some random vegetables in my fridge and decided to make a quick mostly healthy lunch out of them. 

Ingredients:


8 Lamb chops
a mix of equal parts Cumin, Salt, and Pepper (I used half a teaspoon of each and had plenty)
1/4 cup White Wine
1T Olive Oil
1/2 cup Heavy Cream
1t Ground Mustard

Heat the oil in a skillet just big enough for the lamb chops over medium high heat.

Sprinkle spice mixture on one side of lamb chops and rub into the meat.  Place lamb chops spice side down in heated oil.  Sprinkle spice mixture over second side and rub into place.  You probably won't use all the spice mixture.  You just want to get a nice light coating.  You can see the amount of spice I used on mine in the picture above.  Feel free to add more or less to personal taste. 

Brown lamb chops on each side.  This took me about 5 minutes per side, but my stove cooks fast.  8 to 10 is likely to be more standard.

Remove lamb chops from skillet and deglaze pan with white wine.  Allow white wine to cook almost all the way down before adding heavy cream and mustard.  Bring to slight boil and replace lamb chops.  Cover and turn temperature down to medium low and allow to simmer for 5 minutes for medium rare.  Enjoy.

I served mine with the Roasted Vegetables and Cilantro Rice
