Basic Tomato Sauce


Ingredients:
2 28oz cans whole tomatoes
2 6oz cans tomato paste
3T Bouquet Garni
3 cloves of garlic

Place all the ingredients in a food processor or blender and blend until smooth consistency.  Once you have that consistency you can cook it as it is for a simple sauce, or add it to other dishes. 

Like I said this is a very basic and easy recipe.  A few things to look out for though.

  • Get canned cooked tomatoes that have been peeled.  The skins would be hard to get blended enough to leave you with a satisfying consistency.
  • Don't be afraid to add things.  I've added hot peppers for example when I wanted a spicy tomato sauce for something.
  • I used Penzey's Bouquet Garni for this one, but I've used other things as well.   Penzey's Herbs de Provence and Italian seasoning are also fabulous for example.  
  • You'll notice that my food processor is filled higher than it should be in the picture.  I know mine can handle it without making a mess.  If you are unsure about yours don't fill it so full and just do it in 2 batches instead of one,
  • I've done this with a food processor, blender, and an immersion blender.  It will work with any of them, but I find it a little harder to get the correct consistency with the immersion blender. 
  • Most of the time when I make this it's as an ingredient in something else.  If I'm making it to use on it's own I'll often add more herbs and spices to give it a bit more flavor.
